Lentil Oatmeal Cookies

Ingredients

1 cup butter, softened
1 cup brown sugar
1/2 cup white sugar
1 egg
1/2 cup USA lentil puree
1 teaspoon vanilla
1 cup all purpose flour
1/2 cup lentil flour
1/2 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
3 cups oats
1 cup chocolate chips

Directions

Preheat oven to 350. Cream together butter and sugars. Add egg. Beat in vanilla. Mix in lentil puree. In a separate bowl combine flour, baking soda, cinnamon and salt. Gradually mix dry mixture into butter mixture. Once completely mixed, fold in oats and chocolate chips. Put 1 tablespoon cookie dough on greased cookie sheet. Bake for 10-12 minutes until slightly brown.
