Ingredients
1⁄2 cup dry USA lentils, rinsed
11⁄2 cups water
1 cup diced fresh pineapple
1⁄2 cup finely chopped cilantro
1⁄4 cup finely chopped red onion
Dressing ingredients:
2 tablespoons balsamic vinegar
1⁄4 cup fresh lime juice
1 teaspoon minced fresh ginger
2 tablespoons peanut oil
1⁄2 teaspoon grated lime zest
1 clove garlic, minced
1⁄4 teaspoon salt
Method
Combine lentils and water in a medium saucepan and bring to a boil. Reduce heat, cover, and simmer until lentils are just tender, about 20 minutes. Drain.
In a small bowl, combine dressing ingredients.
In a serving bowl combine cooked lentils with pineapple, cilantro, and red onion. Stir in the dressing.
Chill for at least 1 hour before serving
